Breakfast Bounty

Rise & shine it's raiding time! You're working hard all night and ready to raid first thing in the morning with your fellow guildies. But first, you need some food that's gonna be hearty enough to sustain you through the hours of conquering bosses. But you also want food that's not so heavy that it gives you food comatose and you get all sleepy and start doing dumb things like standing in the fire.

This egg, meat, and veggies concoction will give you enough energy to keep you going but it's not loaded down with sugar. It also won't break the bank at only $1.69 per serving!

Breakfast Bounty
4 Servings | Total Time: 10 minutes | Skill: Apprentice

Mats:
  • 8 Eggs or 2 cup of egg substitute
  • 2 cup bite-sized veggies such as broccoli, cauliflower, and carrots
  • 1 cup cubed smoked ham
  • 1 cup shredded cheese
  • 1 tsp pepper
Craft: Spray a large skillet with non-stick cooking spray then place on the stove over medium heat. Cook the ham in the skillet until it's slightly browned then add eggs. Add pepper and scramble the eggs. Meanwhile, place the veggies in a medium bowl. Cover and cook in the microwave on high for 2 minutes. When the veggies are done, add them to the eggs and ham. Cook for 1 minute more then add cheese. Mix well and make sure everything is heated through, eggs are cooked and the cheese is melted.

Strategies: You can use any kind of veggies and any kind of meat you want for this recipe. But if you do replace the (salty) ham you may consider adding a 1/2 tsp of salt when you add the pepper. If you want to kick it up a notch, you can also add salsa and/or hot sauce!

LFM: Toast or bagels and any kind of fruit.

Cost:
  • Egg Substitute | $1.75
  • Frozen California Medley Vegetables | $1.00
  • Cubed Smoked Ham | $2.00
  • Shredded Cheddar Cheese | $2.00
Total Cost: $6.75
Cost Per Serving: $1.69

  1. For a more refined taste remove :

    California Medley Vegetables
    Shredded Cheddar Cheese

    And add :

Crisp Bell Peppers - the more colors the better.
    Shredded Asiago Cheese

The Asiago cheese is a really nice, sharp flavor to add in.
