Don Carlos' Huevos Rancheros


Don Carlos is a man of taste. He has the best looking hat in game! It's very coveted because who wouldn't want a hat that could summon your very own personal ghost wolf pet? You've seen what people will do for a pirate hat that summons a parrot! Don Carlos says that many people tried to fight him for his hat and they never won. Well, except for this group of five people one fateful day in Southshore. They took his hat. But what that group of people didn't know about Don Carlos' hat is that inside it was a secret recipe for Huevos Rancheros!

These tortillas are baked in the oven rather than fried, making it far less messy and a whole lot healthier. The contrast between the heat of the salsa and the coolness of the sour cream make this an instant tex mex hit. Just a bit of chopped cilantro and a dash of lime juice on top brightens the dish and enhances all it's flavors.


But that's not all there is to know about this meal. You can make it super special with some artistic creativity (or a cookie cutter). Valentine's Day is coming up and this recipe is so simple you can easily make it for the one you love. Forget the crowded restaurants and busy theatres. Stay home, light a few candles and cook a Valentine's Day themed dinner!


Don Carlos' Huevos Rancheros

4 Servings | Total Time: 15 min | Journeyman

Mats:
  • 8 6" Corn Tortillas
  • 1 can Pinto Beans, rinsed
  • 8 Tbl Sharp Cheddar Cheese, shredded
  • 8 tsp Grated Parmesan Cheese
  • 8 Eggs
  • 1 cup Salsa
  • 1 cup Sour Cream
  • 4 Tbl Cilantro, chopped
  • Lime Juice
  • Cooking Spray
Craft: Preheat oven to 425°. Coat both sides of each tortilla with cooking spray and place tortillas on a cookie sheet, overlapping them a little. Bake them in the oven for 4 minutes. Meanwhile, cook 4 of the 8 eggs in one large saucepan over medium-high heat until done. Remove eggs from the pan, set aside, and cover to keep warm.

Remove tortillas from the oven and add two spoonfuls of Pinto beans, 1 Tbl of cheddar cheese and 1 tsp of Parmesan to each tortilla. Return the tortillas to the oven for 6 more minutes. Meanwhile, cook the last 4 eggs. When the tortillas are done, remove from the oven and top each tortilla with an egg, a spoonful of salsa, a spoonful of sour cream, a sprinkle of cilantro, and a dash of lime juice. Serve immediately.

Strategies: If you want more heat, choose a higher heat salsa and/or add a dash of hot sauce. If you don't want any heat at all then trade the salsa for freshly diced tomatoes. The corn tortillas can be cooked in the microwave but you need to watch them very closely so they don't burn. Cook them in 15 second intervals. They'll be done when they just barely start to brown and the tortilla is crispy. It should only take a little over a minute.
