EZ Cucumber Salad


St. Patrick's Day is coming soon and that means corned beef and cabbage and potatoes and all kinds of creative green things. This week you'll be seeing a few green-theme recipes from us! We'll start with something easy! A simple, fast, cucumber salad. You can slice it like I've done or you can chop it up and add some other green veggies too. Dressed up or dressed down this will be a tasty side to any meal and makes a great snack too!




EZ Cucumber Salad
6 Servings | Total Time: 5 min | Apprentice

Mats:
  • 1 Large Cucumber
  • 2 Tbl Italian dressing
Craft: Peel the cucumber then slice or dice it. In a medium bowl, toss the cucumber slices with the dressing. Serve cold.

Strategies: You can add more depth to this side by adding cherry or grape tomatoes, radishes, celery, broccoli and/or green beans. You can swap out the Italian dressing for any kind of dressing you'd like.

  1. Makes me so ready for spring. I love cucumbers in vinegar. Have not tried the Italian dressing.
