Halfing's Shrimp & Pepper Pasta


I know it's hard to believe but even hobbits get tired of mushrooms every once in a while and crave some variety in their vegetable fare. They get tired of the same ol' same ol' for dinner! But when Farmer Maggot asks his wife for something different, she throws up her hands and tells HIM to do the cooking! What's a halfing to do?

Halfing! That's it!

Farmer Maggot loves this recipe because it goes halves on everything! Perfect for hobbits like himself. There is no need to keep checking the recipe to see what measurements he needs to use to make things taste good and acquire that perfect balance between pasta, sauce and veggies. And what's more, it makes great leftovers for second breakfast the next day!


Halfling's Shrimp & Pepper Pasta

4 Servings | Total Time: 15 min | Apprentice

Mats:
  • 12oz Spaghetti Noodles
  • 1/2 lb Shrimp, peeled, deveined, tails off
  • 1/2 cup Alfredo Sauce 
  • 1/2 cup Ranch Dressing
  • 1/2 cup Milk
  • 1/2 cup Celery, chopped (1 stalk)
  • 1/2 can Whole Kernel Corn, drained
  • 1/2 Green Bell Pepper
  • 1/2 Orange or Yellow Bell Pepper
  • 1/2 Red Bell Pepper
Craft: Cook noodles according to package instructions. Meanwhile chop veggies into bite sized pieces. 5 minutes before pasta is done, add the bell peppers and shrimp to the water. 2 minutes before pasta is done add corn and celery to the water. When pasta is done, drain and pour pasta and veggies into a large bowl. In a medium saucepan (or the pot from the pasta) over medium-low heat, add Alfredo sauce, Ranch Dressing and Milk. Heat through but do not boil. Pour sauce over pasta and toss to coat.

Strategies: You can add even more flavor to this by adding a half a packet of dry Ranch dressing mix. Looking for a use for the other half of all your peppers? Try Shoushi Sweet'n'Sour Chicken!

LFM: Sourdough rolls go awesome with this one but if you only have regular dinner rolls that's a-okay too.

  1. I need to try this, and funny thing is I got all this in my kitchen to make. Never thought about Alfredo sauce and ranch...hmmm.
